Food businesses, including caterers, food manufacturers and food producers, must ensure they provide safe food for their customers. Doing so requires food businesses to protect themselves from intentional food threats, such as food fraud and food crimes, with a food defence system.
In addition to the moral obligation to provide safe food, failure to prevent or detect food threats can be harmful to businesses’ reputations and bottom lines.
This VACCP and TACCP training is designed to help learners understand food threats and how to combat them. After completing the course, learners will understand:
Alongside this training, we recommended that all learners take one of our Level 2 Food Safety courses for Catering, Retail or Manufacturing. These courses cover a range of information on food safety and hygiene, knowledge of which is required to implement a food defence management system. We also offer a Level 2 HACCP Training course, which covers the creation of a food safety management system.
It takes approximately 60 minutes to complete the course. This can be spread out over multiple sessions or completed in a single session. There is no time limit for completion.
All candidates must complete a multiple choice assessment after working through the training material. The candidate will be asked 20 multiple choice questions and need to answer a minimum of 15 correctly to pass. Candidates will be given instant feedback after completing the assessment stating whether they have passed or failed. The assessment can be retaken as many times as is required to pass at no additional cost.

Successful candidates will receive a Institute of Hospitality Certificate and 1 CPD Credit.
This course certificate has no expiry date because there is no formally recognised period of validity for any health and safety training or this type of course. The HSE recommends refresher training is carried out whenever it is felt necessary. Safety registration bodies such as CHAS, SafeContractor, ConstructionLine & SMAS and other members of the SSiP scheme recommend most re-training is done every 3 years. We would recommend refreshing knowledge as and when legislation or guidance changes applicable to these regulations.
